Organic 100% Buckwheat Pancake Mix

Yields approximately 12 large pancakes


What you need: we recommend organic ingredients. Use what you have available. 


  • 1 + 1/4 cup organic apple sauce (or sub with 1 + 1/3 cup ripe, smashed banana for a more moist pancake as long as you enjoy the banana flavor)
  • 1 cup organic plant milk
  • 1/2 cup maple syrup
  • 1/4 cup organic extra-virgin olive oil
  • 5 Tablespoons spring/filtered water (to make flax egg)
  • 1 Tablespoon vanilla extract (optional)


Cooking Instructions


Procedure –

  1. Prepare flax egg in a bowl by mixing ground flax + water into a slurry.  Allow to sit for 10 minutes until it thickens.
  2. Pour dry ingredients into a bowl, and gradually add the wet ingredients from above one-by-one.
  3. After flax as thickened, add to the mixter and stir until combined.
  4. Optional: add blueberries or chocolate chips if you would like to try blueberry pancakes or chocolate chip pancakes!
  5. If you prefer a thinner pancake, add more plant milk.  If you enjoy a denser pancake, keep as is.
  6. Warm pan or griddle to medium heat, coat with organic extra virgin olive oil to cook pancakes. (Can omit oil if you prefer.)
  7. Once air bubbles appear on the surfce, pancakes are ready to be flipped.  Cook for less time on the second side.
  8. Serve with maple syrup and anything else you desire.
